Galvannealed coils are carbon steel coated with a zinc-iron alloy on both sides. The zinc-iron alloy makes it easier for paint to adhere to the steel. Galvannealed steel is made by:

Coating carbon steel with zinc using a hot-dipped process
Annealing the steel in a 1050° F oven
Drawing some of the iron into the outermost layers of the steel, creating a zinc-iron alloy

The zinc coating provides corrosion resistance by acting as a protective barrier between the steel and the environment.
